refactor: organize scripts into scripts/ directory

Move utility scripts to dedicated scripts/ directory for better project
organization:
- BuildAll.sh
- CleanVendor.sh
- CloneVendorRepos.sh
- StatusCheck.sh
- validate-mcp.sh

Remove temporary build-nextcloud-mcp.sh as nextcloud-mcp is now built.
