fix: update nextcloud-mcp and proxmox-mcp STATUS

Fixed nextcloud-mcp Dockerfile COPY destination (./ instead of .)
Fixed ProxmoxMCP pyproject.toml Python version requirement (>=3.10)
Fixed ProxmoxMCP Dockerfile to include git for git dependencies

Updated STATUS.md to reflect successful builds
