Update macos_install.sh

Introduction of a few new things.

1. Introducing a version line in comments. This is just for the ability to troubleshoot installation problems as we can easily have someone let us know the version information and then troubleshoot problems.

2. Instead of copying the scripts, we are now create soft links so all updates are now updated automatically
